About this tea

Fo Shou (Buddha's Hand) takes its name from the Buddha's hand citron fruit, which its leaves resemble in shape and its flavor evokes in character. Originating in Fujian's Yongchun County over 300 years ago, this cultivar produces remarkably large leaves that twist and curl during processing like fingers. Buddhist monks traditionally grew this tea near temples, believing its citrus fragrance aided meditation and clarity.

The cultivar's genetics produce natural citrus compounds, particularly limonene, creating authentic citrus notes without any flavoring. Grown primarily in Fujian and Taiwan, with each region producing distinct styles. Fujian versions undergo medium oxidation (40-50%) with light roasting, emphasizing citrus brightness. Taiwan versions often receive less oxidation, highlighting floral notes. The large leaves require gentle processing to prevent breaking, and their size means slower, more even oxidation.

The flavor profile is bright and uplifting: natural citrus notes dominate - bergamot, lemon zest, and buddha's hand citron. Underlying floral sweetness of orange blossoms adds complexity. The texture is smooth and refreshing with slight astringency that cleanses the palate. A honey-like sweetness emerges in later infusions. The citrus character is integrated, not sharp or acidic but rounded and pleasant. Multiple infusions reveal evolution from citrus to floral to sweet. The aroma alone is therapeutic - bright and clarifying.

Brewing recommendations: Use 1 heaping teaspoon (4g) per 250ml cup with water at 90°C (195°F), steeping for 2 minutes. The large leaves need room to expand. For gongfu style, use 6-7g per 100ml, steeping 30-45 seconds initially. Can yield 5-6 uplifting infusions. Glass vessels showcase the large, beautiful leaves.

Perfect for afternoon pick-me-up when you need mental clarity without heavy caffeine. Popular in Buddhist communities for meditation preparation. Pairs excellently with citrus desserts, lemon cakes, light pastries, and fresh fruit. The citrus notes make it refreshing iced in summer. Also wonderful with seafood and light poultry dishes. This is liquid sunshine - brightening mood and palate alike.
