Water Quality for Tea: What Actually Changes the Cup
Use filtered water with a moderate mineral content — roughly 50–150 mg/L of dissolved solids — and low alkalinity. Avoid distilled water, which extracts poorly, and softened water, which is worse still. A carbon filter fixes most of it.

The ingredient nobody weighs
A 250 ml cup of tea contains about 3 grams of leaf and 250 grams of water. You will happily spend twenty pounds on the first and give no thought at all to the second, and then blame the tea when the cup tastes flat.
Water affects tea in three separate ways, and it helps to keep them apart:
- Dissolved minerals — mostly calcium and magnesium — participate in extraction. They are not neutral bystanders; they help pull flavour compounds out of the leaf.
- Alkalinity — carbonate and bicarbonate — buffers pH upward. This is the destructive one: it mutes aroma, dulls colour and produces the film.
- Chlorine and chloramine — added for disinfection — carry straight into the cup as a smell.
The clearest experimental work on the first point comes from coffee rather than tea. A study of dissolved cations in coffee extraction showed that magnesium and calcium ions materially change which compounds come out of the grounds, while bicarbonate suppresses the desirable acidity. Coffee and tea are not the same drink, but they are the same physical process — hot water pulling soluble compounds out of a plant — and the practical conclusion transfers cleanly: some minerals good, carbonate bad, none at all is not the answer.
Hardness, and the film on your Darjeeling
Hard water carries a lot of calcium and magnesium. In moderation that is fine — helpful, even. What comes with hardness in most municipal supplies is alkalinity, and alkalinity is what does the damage.
Two visible symptoms:
- The iridescent film on the surface of black tea is calcium carbonate combining with the tea's own polyphenols. Harmless, and a perfect diagnostic.
- Green tea turning olive-brown instead of jade, sometimes within a minute of brewing. High pH accelerates the oxidation of the catechins that give a green tea its colour.
Delicate teas suffer most. Sencha, Dragon Well, Gyokuro and Silver Needle are built entirely out of subtleties that hard water erases. Robust teas barely notice: English Breakfast was blended in cities with hard water and drunk with milk, and Shou Pu-erh is dense enough to shrug it off.
If you can only fix your water for some of your tea, fix it for the greens and whites.
Why distilled water is worse, not better
The intuitive move — remove everything, get pure tea — fails. Without dissolved cations, extraction is measurably less effective and the cup arrives thin, hollow and strangely metallic in the finish. There is also nothing to buffer the tea's own acids, so the balance shifts.
The same logic condemns softened water, which is the single worst option in a domestic kitchen. Ion-exchange softeners swap calcium and magnesium for sodium. You lose the minerals that help extraction, keep the alkalinity that ruins aroma, and gain a salty note. If your house has a softener, take tea water from the unsoftened kitchen tap, which most installations provide.
What to actually do
- Start with a carbon filter jug. It removes chlorine and chloramine, reduces some hardness, and costs almost nothing. For most people this is the entire fix.
- Descale the kettle. Limescale is not neutral — it keeps dissolving into every brew and it makes the element slower and less accurate. Citric acid, once a month in a hard-water area.
- Do not re-boil endlessly. Not because of oxygen — that effect is negligible — but because repeated boiling concentrates the minerals in the remaining water. Fill fresh.
- If you buy bottled, read the label. Target 50–150 mg/L total dissolved solids and low bicarbonate. Many premium mineral waters are aggressively alkaline and are a bad choice for tea.
- Never use hot water from the tap. Domestic hot-water systems accumulate dissolved metals and sediment.
Temperature is still the bigger lever
One caveat worth stating plainly: water quality is a second-order problem. If you are brewing Sencha with boiling water, no filter on earth will rescue it. Troubleshooting
- Oily film on black tea: hard, alkaline water. Filter it.
- Green tea goes brown quickly: high pH. Filter it.
- Chlorine or swimming-pool smell: carbon filter, or leave water standing overnight.
- Thin and hollow at the correct temperature: water too pure, or the kettle needs descaling.
- Chalky, drying finish across every tea: very hard water, or scale shedding from the kettle.
Frequently asked questions
Is distilled water good for tea?
No. Pure water extracts tea badly: the dissolved calcium and magnesium in ordinary water actively participate in pulling flavour compounds out of the leaf, and without them the cup comes out thin and oddly flat. Distilled or deionised water is the one thing genuinely worse than moderately hard tap water.
Why does my black tea have an oily film on top?
That is calcium carbonate from hard water combining with the tea's polyphenols at the liquid surface. It is harmless and it is a reliable diagnostic: if your tea forms a film, your water is hard and alkaline, and every delicate green and white tea you brew is being dulled by it. A carbon-plus-ion-exchange filter removes it.
Should I use bottled water for tea?
Only if you check the label. Look for total dissolved solids around 50–150 mg/L and low bicarbonate. Many popular mineral waters are far too alkaline for tea and will flatten a green tea completely, while very low-mineral waters give a thin cup. A filter jug is cheaper and usually better than guessing at bottles.
