About this tea
Dong Ding (Frozen Summit) oolong comes from the mist-shrouded peaks of Lugu Township in Nantou County, Taiwan. Its history began in 1855 when Lin Feng Chi brought 36 tea plants from Fujian's Wuyi Mountains, planting them on Dong Ding Mountain. The name refers to the treacherous frozen paths tea pickers navigated, requiring them to flex their toes ('dong ding' in Taiwanese) for grip. This tea became Taiwan's first renowned oolong, setting standards for quality.
Grown at moderate elevations of 600-1,200 meters, Dong Ding occupies the sweet spot between high mountain delicacy and lower elevation body. Traditional processing involves 30-40% oxidation followed by skillful roasting, often using longan wood charcoal. Master roasters spend days repeatedly roasting and resting the tea, developing complexity while maintaining freshness. This traditional craft is increasingly rare as market preferences shift toward greener styles.
The flavor profile exemplifies balance: initial roasted notes of caramel and toasted grains give way to underlying floral sweetness - orchid and honeysuckle. The medium body carries both refreshing high notes and satisfying depth. Well-made Dong Ding exhibits 'hou yun' (throat resonance) - a cooling sensation and returning sweetness. The roasting adds longevity, with flavors developing over years when stored properly. Each infusion reveals different aspects, from roasted to floral to fruity.
Brewing recommendations: Use 1 teaspoon (4g) per 250ml cup with water at 90°C (195°F), steeping for 2 minutes. For gongfu style, use 7-8g per 100ml, steeping 30-45 seconds initially. This tea rewards attention - adjust parameters to emphasize either roasted or floral characteristics. Premium Dong Ding yields 6-8 flavorful infusions.
Perfect for contemplative afternoons or sharing with fellow tea enthusiasts. The balanced character makes it suitable any time of day. Pairs excellently with traditional Taiwanese snacks like pineapple cakes, sun cakes, and nougat. Also complements nuts, dried fruits, and mild pastries. The roasted notes make it particularly satisfying in cool weather.
